These cookies are the perfect snack for anyone who enjoys chocolate and Matcha. Newbies to Matcha will also find these cookies incredibly delectable, as the Matcha flavor is not overpowering and balances well with the semi-sweet chocolate chips.
As with all my recipes, these cookies not only taste delicious, but also provide some health benefits. They are made with fiber-rich spelt flour and a ‘flax egg’, which is also a good source of omega-3 fatty acids. The sweetness of the cookies is achieved primarily through low amounts of organic brown sugar and vanilla extract. The Matcha powder and the dark chocolate chips are powerful sources of antioxidants and take these cookies to a whole new level of goodness. Dry Ingredients
- 1 1/3 cups light spelt flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 teaspoons Matcha powder
- 1/2 cup organic brown cane sugar
Wet Ingredients
- 1/2 cup melted margarine
- 1 flax egg (1 tablespoon flax seed meal + 3 tablespoons water)
- 1/4 cup non-dairy milk
- 2 teaspoons vanilla extract
Final Additions
- 1 cup vegan semi-sweet chocolate chips or chopped dark chocolate (65+%)
- Sprinkle of salt
Instructions
- Preheat the oven to 180°C.
- In a large bowl, whisk together all the dry ingredients, except and the chocolate chips.
- In a medium-sized bowl, mix all the wet ingrediants until well-combined.
- Add wet mixture to the dry one and then mix all ingredients until they are just combined.
- Fold in the chocolate chips.
- Roll the dough into balls and place them on a parchment paper-lined baking sheet. Flatten them out a bit with your palm.
- Sprinkle some salt over your cookies for an extra oomph.
- Bake for 10-12 minutes.
- Allow cookies to cool for roughly 5 minutes on the baking sheet and then transfer your masterpieces to a cooling rack for another 10+ minutes.
