Liz Moody-inspired Healthy Brownie Batter Bites

I absolutely love listening to podcasts. I listen to them when I get ready in the morning, while I commute to and from work, and whenever I am cooking or baking. In other words, I listen to podcasts all day long. In particular, I enjoy listening to self-development and self-care/ well-being (apparently the new, more appropriate term for wellness)-themed podcasts, including Lewis Howes’ School of Greatness, Deliciously Ella, or How to fail with Elizabeth Day.

A go-to podcast of mine, especially right now during the COVID-19 pandemic, is Healthier Together with Liz Moody. Liz Moody, a freelance journalist, cookbook author and former food editor at mindbodygreen. She lives in Brooklyn, NY, with her family and hosts an amazing well-being podcast, where she interviews change makers in the food and wellness industry such as Kelly LeVeque, Rachel Mansfield and Dr. Will Cole; thereby covering a wide range of topics, including anxiety, gut health, morning routines, meal planning/prepping, and natural skincare. She also has a fantastic Instagram account on which she recently posted a super easy recipe for healthy brownie batter bites. These brownie batter bites looked so delicious that I immediately forwarded the post to my sister, Lisa. My sister gave these brownie batter bites her own spin and the resulting bites tasted so delectable that I simply have to share her version of the recipe with you. You are truly in for a treat!

Instructions

Ingredients

  • 1/2 cup unsalted creamy almond butter
  • 1 tablespoon vanilla extract
  • 4 tablespoons maple syrup
  • 1/4 cup almond flour
  • 1/8 teaspoon fine grain sea salt
  • 1/4 cup raw cacao powder
  • 1/4 cup chopped Brazil nuts
  • Coconut flakes to top

Instructions

  1. In a medium-sized bowl, combine the nut butter, vanilla, maple syrup, flour, salt, and cacao powder, using a spatula or your hands.
  2. Mix in the nuts and then roll the dough into smaller-sized balls (roughly 2 tablespoons of dough for each). Should make about 12 bites.
  3. Cover each dough ball with coconut flakes. Done!
  4. Enjoy!
