In the mornings, we sometimes do not have enough time to have a proper sit-down breakfast, so we grab a cookie for the road, not just any cookie, but toasted almond & carrot cookies. This recipe was inspired by ambitious kitchen’s recipe for healthy carrot cake cookies. These cookies are loaded with wholesome, delicious goodness that keeps you fueled until lunchtime. Try them! Do not be surprised if next time you prefer this cookie over your go-to cereal.
Recommendation: Make enough toasted almonds that you have some for an afternoon, in-between snack. Almonds contain magnesium, which is known to increase energy levels.
Ingredients
Toasted Almonds
- 1 cup whole almonds (if possible, the organic kind)
Dry ingredients
- 3/4 cup gluten-free flour
- 2 tsp baking soda
- 1/4 tsp sea salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/4 cup coconut sugar
- 3/4 cup rolled oats
Wet ingredients
- 1 flax (1 tbsp flax meal + 3 tbsp water/ stir and set aside for 5 minutes)
- ¼ cup unsweetened non-dairy milk – I used Oatly
- 2 teaspoon vanilla extract
- 1/3 cup melted vegan margarine
Fold-ins
- 1 heaping cup shredded carrots (2 medium-sized carrots)
- 3/4 cup roughly chopped, toasted almonds
Topping
- Flakey sea salt (optional)
Instructions
- Preheat the oven to 180°C/ 350 °F.
- Line a rimmed baking sheet with parchment paper. Roast almonds for 10-15 minutes.
- Add all the dry ingredients to a large-sized mixing bowl. Whisk until well-combined.
- Add all the wet ingredients to a medium-sized mixing bowl. Whisk thoroughly.
- Using a spatula, gently fold the dry mixture into the wet mixture. Don’t overmix!
- Gently fold in the shredded carrots and chopped almonds.
- Chill dough in the fridge for 30 minutes.
- Using an ice cream scoop, scoop the dough onto a parchment-lined baking sheet. Six cookies should fit, with plenty of space between them. Flatten the cookies with a spatula and sparkle with some flakey salt.
- Bake the cookies for 12–18 minutes, until browned. Let cool for approximately 10 minutes on the baking sheet before transferring the cookies to a wire rack to cool completely.
