Apple Crumble Bars

We have been having lots of fun in the kitchen experimenting with cornflour. Introducing our newest creation: Apple Crumble Bars! These bars are somewhat crunchy, definitely crumbly, and bursting with apple flavor. They are a bit more work-intensive than our other recipes, but the effort is 100% worth it. Smiles guaranteed!

Ingredients

Shortbread Crust

  • 2/3 cup cornflour 
  • ½ cup oat flour
  • 1 tsp baking powder
  • ¼ tsp salt 
  • 1/3 cup coconut oil (melted) 
  • ¼ cup maple syrup 
  • 2 tbsp vanilla extract

Apple Filling 

  • 4 medium-sized apples, peeled, cored, and thinly sliced 
  • 2 tbsp cornflour 
  • ¼ cup organic cane sugar
  • Juice of half a lemon

Crumble-Topping 

  • ¾ cup rolled oats 
  • ½ cup cornflour 
  • 2 tbsp organic cane sugar
  • 1/3 cup vegan butter or margarine (softened) – Add more if necessary! 

Instructions

  1. Preheat oven to 180 º C (350 º F). Butter baking pan, line with parchment paper, and then butter again the sides and the bottom. 
  2. In a large-sized mixing bowl, sieve the oat flour, cornflour, and baking powder. Add salt. Stir until well-combined. 
  3. In a separate bowl, add coconut oil, maple syrup, and vanilla extract. Stir until well-combined. 
  4. Add coconut mixture to the dry mix. 
  5. Stir together or use your hands to mix everything until you have a crumbly dough.
  6. Bake crust for 13-15 minutes in the oven, or until lightly golden on top and slightly darker around the edges.
  7. Remove from oven and set aside.
  8. To prepare the apple filling, add apple slices and lemon juice to a large mixing bowl. Stir to coat the apple slices in lemon juice. 
  9. Add cornflour and sugar to the apple slices, and stir until apples are well-coated. 
  10. Arrange apple slices evenly on baked crust.
  11. To make the crumble topping in a large bowl, combine oats, cornflour, and sugar. Add the butter and mix (with your hands) until crumbly.
  12. Sprinkle topping evenly over the apple slices. 
  13. Bake for 40-45 minutes or until topping is golden.
  14. Let cool for at least 30 minutes, and then cut into bars.  
  15. Enjoy!
